Fête de l’Abricot

No, it’s not apricot season. But I still have apricot jam from this summer lying around, and so can you (I am America, and So Can You!), if you pick up several kilos of apricots at the fête de l’abricot in Rivesaltes. Check out my post at Flipkey… or just enjoy the photos of freshly made jam tart, care of the Sous-Chef (she makes her own crust and is therefore a better person than I am).

Those apricots are gorgeous! I still have apricot jam in my pantry from this summer too and this looks like the perfect use for it.

This image evokes memories of waking on Sunday mornings to find my Father baking Apricot pies in our tiny kitchen. The man could roll a mean crust.
I am inspired to try to recreate this in the ridiculous Easy Bake Oven that I am currently using.
    I love your food choices.
    Keep them coming.
